Grits Casserole Recipe Perfect for Holiday (or Anytime) Breakfast

Food to me represents warm hospitality, fun and love. It’s a way to give thanks to those around you and to honor family traditions. Born and raised in the Sunshine State, grits are a Southerner’s staple. This make-ahead recipe is our family’s take on a classic breakfast casserole that can be shared with friends and family over the holidays, or any time for that matter.  

Sausage & Grits Breakfast Casserole

INGREDIENTS

1 lb. bulk breakfast sausage, such as Jimmy Dean

2 cups water

2 cups chicken stock

1 tsp salt

1 ¼ cup polenta (or yellow corn grits)

1 ½ cup shredded cheddar cheese, divided

1 cup shredded smoked cheddar

4 tbsp butter

1 cup milk

1 tsp garlic powder

1 tsp paprika

¼ tsp cayenne pepper 

6 eggs, beaten

Cooking spray   

INSTRUCTIONS

  1. In a skillet over medium heat, add the sausage and cook until browned, crumbling with a spatula, as it cooks. Set aside.
  2. Bring water and chicken stock to a boil in a large saucepan. Add the salt. Slowly add in the grits while stirring. Reduce the heat to medium low and cook, stirring occasionally, for about 10-15 minutes, until thickened. 
  3. Remove the pan from the heat. Stir in 1 cup each of the cheeses plus milk, butter, garlic powder, paprika and cayenne pepper. Stir in sausage and eggs. 
  4. Spray a 13 x 9 baking dish with cooking spray. Transfer the mixture to the baking dish and sprinkle with remaining ½ cup cheddar cheese.
  5. Bake uncovered at 350° for 40-50 minutes or until golden and bubbly. Let stand 15 minutes before serving.
  6. Make-ahead directions: Prepare the casserole mixture as directed above but do not bake. Cover and refrigerate overnight. Remove from the refrigerator 30 minutes before baking, then bake as directed above.
