MEET Elizabeth Diane Bakery

“When life gets a little stressful, there’s nothing a batch of cookies can’t fix,” says Elizabeth Smith, owner and operator of Elizabeth Diane Bakery.

Baking became a salvation when in 2019, Smith and her husband lost three pregnancies.

“My mental health severely suffered, and I found myself needing to fill time so I didn’t let the dark thoughts get the best of me,” she said. “I turned to baking  — a long-time stress reducer — and decided to try one of the hardest and most time-consuming desserts: macarons.”

Smith said she thinks macarons are the most aesthetically pleasing cookies. It took her a handful of batches to perfect it, and then she couldn’t stop. 

Keeping busy on nights and weekends led to the realization of her long-time dream: opening a bakery. She is starting as a cottage food operation with the goal to one day open a waterfront location in Melbourne — “where I can soak in the calming views while doing something I love.”

The bakery’s menu offers macarons and cookies of a wide variety of flavors, with new ones constantly being added.

“I like to accept ‘flavor challenges’ as I call them — if you don't see a flavor you’re thinking about, submit a flavor challenge and I’ll get to work,” Smith said. 

“Baked goods make other people happy and I love the ability to spread joy through something as simple as a cookie. Being able to deliver a tangible product to someone that brings them joy, appreciation, and happiness is one of my favorite parts of owning this bakery.”

Smith offers delivery and pickup within Melbourne, Viera, Palm Bay and beachside areas.
