For as long as I can remember, I have always started the new year with a theme that supports my goals and new year’s resolutions. This time, I am making 2018 my year to have a love affair with food! I am going to embrace all the foods that are good for me and make the best food choices available daily. Planning will be key.

Jan. 26 will be the beginning of my third year with type 1 diabetes. My first year was rather emotional and I basically used it to just wrap my head around the fact that I had diabetes and had become insulin dependent. The second year, I became more in tune with my body and primarily focused on developing a fitness program. I hired a personal trainer for accountability and strength training. My goal was to show up and work out. Feb. 14 marks my one-year workout anniversary. I have lost over 14 inches and went from a size 14 to a size 10.

You may be thinking, why a love affair with food? I have learned that exercise alone isn’t going to help me reach my ideal weight and size for optimum health, nor does it keep my sugar balanced, so food is the next thing that I must learn how to manage and conquer. I once heard, abs are built in the kitchen not the gym. This is my year to build those abs!

My nutritionist has suggested that I move toward a plant-based diet. For many years this idea has been circling around me. I have many friends who eat clean, meaning no gluten, dairy, wheat, soy, caffeine, or alcohol. And my youngest son, Sean, spent many years eating raw/vegan and is ready to share his knowledge and embark on this journey with me.

 I love most vegetables and look forward to making creative, flavorful and fun recipes that support my overall health and wellness.
